The island’s cooking has Azorean roots and plenty of sea. Fish, shrimp and shellfish appear in dishes such as fish stew with pirão (a thick broth with cassava flour), breaded shrimp, shrimp broth and mullet roe, according to Wikipedia. And, of course, oysters.
